Pumpkin Mac & Cheese

This recipe follows the general rule for mac & cheese of making a roux based sauce, adding cheese and then pouring that cheesy goodness over your favorite noodles or vegetable (as is the case with the Keto variation). Bonus time saving feature of this recipe is the use of gluten free pasta which doesn’t need to be cooked prior to adding the sauce for baking!

Veggie Packed Lasagna

Now that my plant-based challenge is over, I’m convinced that the increase in veggies in my diet was a very good thing!  My skin seemed nicer and my mood a bit more light-hearted — not scientifically provable stuff, but I did like the way I felt.  Moving forward I don’t think I’ll be 100% plant-based, but instead be on the lookout for ways to add more veggies where possible, like in lasagna…

Vegan Strawberry Shortcake

Every so often I think it’s healthy to challenge oneself, and not eat the things you think you need.  Six days ago I started a 60-day plant-based diet. Today is the first day I was craving something sweeter than fruit and was pretty short on time. So I came up with this pretty satisfying vegan version of strawberry shortcake.

As long as you don’t mind calling store-bought donut holes an ingredient, this recipe has just 4 ingredients!  By my standards this doesn’t actually qualify as a recipe, but my social media team has been encouraging me to share what’s happening behind the scenes and what I do to make life easier and more enjoyable.
